The sugar maple leaves, along with the design'swind-blown feel, conjure the amber tones of the most renowned product of the sugar maple (Acer saccharum): maple syrup. First discovered by the indigenous peoples of eastern North America, the region which includes the sugar maple's limited global range, maple syrup is a precious commodity of which Canada is the world's largest supplier. Historically, the practice of tapping the sugar maple and boiling its sap to produce dense, sweet syrup was taught by First Nations peoples toFrench settlers in what is now Quebec, Ontario, and New England hundreds of years ago. The product quickly became a sensation in both the New World and the Old as the "sugaring off" process enabled settlers to preserve this uniquely sweet food inboth liquid and solid form to ship back to Europe.Today, the vast majority of the world's supply of maple syrup-about 80 %-comes from Canada, with more than 90% of this total coming from the province of Quebec. Most of this sweet golden Canadian elixir is exported-primarily to the United States.
